Limestone rocks of different types predominate (mountain limestones, dolomitic limestones, etc.), there are also slates, conglomerates and sandstones of siliceous origin in the lower plots.
Climate: Average of 14ºC in the agronomic year 17/18. 2110 hours of sun. 680l/m²
Low temperature inox fermentation. Indigenous yeasts.
No enzymes. No synthetic clarifiers. Low dosage of SO2 (32mg/l) to ensure storage in bottle
6 months in oak barrels (French and American) of various volumes.
Bottled in June 2019. 10.000 bottles.
