Soils. Clayey, with good retention of trace elements. Subsoil of calcareous rock affected by karst phenomena.
Climate. Average of 14ºC in the agronomic year 17/18. 2110 hours of sun. 1319l/m2
OENOLOGY
Fermentation in stainless steel at low temperature. Local yeasts. No enzymes. No synthetic clarifiers. Low dose of SO2 (25mg/l) to ensure bottle storage
