Single varietal red wine. 12 months

FEATURES

Cherry red colour, with light layer characteristic of the variety. Fresh red fruit, raspberry, cherries, blueberry. Dried grass, low bush. Fresh and round, good acidity. Balsamic. Presentation in boxes of 6 units of 75 cl.

HARVEST

Manual harvest on October 4th, 2018 in boxes of 15kg. The bunches were selected at field level.
Pago Valdeáguila, in Garcibuey. Altitude 691m. Sierra de Francia. (SALAMANCA)

ViticulturE

Centuries-old vines in traditional formation. Planting frame 3×1,5m
Soils. Mostly slatey. With sand of granite origin; fresh and loose soils.
Climate.Microclimate of temperate Mediterranean character.

OENOLOGY

Fermentation in open tubs at low temperature with scraping. Treading with feet. Local yeasts.
Aged for 12 months in French oak of 500 l. Different toasted.
No commercial yeasts, no enzymes, no synthetic clarifiers, and a lot of crap that is often thrown into wines. Minimum dose of SO2 (+/-20mg/l) to ensure bottle storage. 12.5% vol. / pH:3.62
